Chocolate Chip Blondies

Chocolate chip blondies are an easy indulgent treat to make. They're crisp on the edges, chewy in the center and have chocolate throughout. Similiar to a brownie, but light in color and have notes of caramel flavor.
Ingredients
- 1 cup all purpose flour
- 1/4 teaspoon baking powder
- 1/4 + 1/8 teaspoon salt
- 1/2 cup unsalted butter, melted (if use salted, reduce salt below)
- 1/4 cup granulated sugar
- 3/4 cup dark or light brown sugar
- 1 large egg + 1 large egg yolk
- 1 teaspoon pure vanilla extract
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees and line an 8x8 inch metal baking pan with parchment paper. Lining with parchment paper will allow you to lift the blondies out to slice.
- Melt butter in a large bowl. Add granulated sugar and brown sugar & vanilla extract. Whisk well.
- Add egg, egg yolk and continue whisking until mixture turns creamy and pale yellow.
- Using a spatula, mix in all purpose flour, baking powder and salt just until combined.
- Lastly, stir in chocolate chips.
- Bake for 22-28 minutes until slightly golden along the edges but gooey in the center. Underbaking is better than overbaking. These are meant to have the texture of a brownie. Let cool, remove from pan and slice!
