I’m being simple and easy today. One, because it’s Friday and Easter is this Sunday so all of us that are cooking and baking are going nuuuuuuuts, and well, I am a fan of simple and easy. Hard stuff is fun, when you have the time and when you’re in the mood. Ya know, like cleaning out your closet type of mood – I’m lucky if that ever happens.

This Vegetable Hummus Wrap has been Vin’s and my lunch for weeks now. Weeks! I kid you not. Aaaannnddddd we aren’t sick of it yet. I work near this little deli downtown Winfield and they sell a vegetable hummus wrap – I like it, but I don’t like spending $6 for it and since I kind of like to make my own food, I thought I could recreate it at home.

So I did. I bought spinach wraps, red peppers, cucumbers, lettuce, shredded carrots, tomatoes and hummus. I spread the hummus on the wrap, chopped up the vegetables and placed them on the wrap, then rolled that baby up.

IT’S SO GOOD! Don’t underestimate vegetables my friends. They’re crunchy, fresh, and pair so well with hummus. I used traditional hummus but change it up with whatever flaaaavas YOU like. I like traditional and so does Vin – it’s a match made in heaven.

So here’s some news – Vin ate this for lunch for maybe two weeks and lost 5 pounds. Prior to recreating this wrap, he was eating a turkey sandwich with cheese, light mayonnaise and maybe some lettuce on whole grain bread. Not bad at all right? But the vegetable hummus wrap my friends is so insanely healthy and tasty. It doesn’t need any mayonnaise or cheeeeeeeeese. Save that stuff for the weekend. Moderation. Baba.

Ingredients
  • Spinach Wrap (or wrap of your choice)
  • Hummus (I used traditional, but any flavor will do)
  • Cucumber, diced
  • Red pepper, diced
  • Shredded Carrots
  • Tomato, diced
  • Lettuce, shredded
Instructions
  1. Spread hummus evenly on the wrap. Add vegetables and roll.
Notes
I purchase a bag of lettuce, shredded carrots, 1 cucumber, 1 container of cherry tomatoes, 1 red pepper, and 1 container of hummus and can make 5 wraps out of it with left over carrots, and lettuce.
