M&M Cookie Cake

A cookie cake! You dig?

I haven’t had a “cookie cake” for yeeeears. Did you get them as a kid like I did? There was a store in the mall that we would always get them at.
Gosh they were good. We usually got chocolate chip and it had frosting on the edges. I could seriously eat the entire thing cake.

I took a slightly different approach to this cookie cake recipe. I used M&M’s (obviously) and a sugar cookie dough versus a chocolate chip cookie dough. There is something about an M&M cookie ya know? I wanted to take that cookie and make it into a “cake” that was chewy and doughy and wonderful.
And it was…absolutely wonderful!

You could argue that this is just a very large cookie, but it truthfully tastes different than that. The texture is way more soft and chewy than a traditional cookie. The outside is slightly crispy but the inside is almost like eating cookie dough..and who doesn’t love cookie dough?

I love the pops of color the M&M’s bring to this cookie cake. I bet kiddos would love this dessert and it would be so much fun for them to make. It’s pretty darn easy…make some dough, press it into a pie dish and bake.

- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/2 cup plus 1/8 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup m&m’s
- Preheat oven to 350 degrees and spray a pie dish with non-stick baking spray; set aside.
- In a bowl, mix together flour, salt, baking soda, and cornstarch; set aside.
- In a stand-alone mixer fitted with a paddle attachment (can use a hand held mixer too), cream together butter and granulated sugar. Add egg and vanilla and mix, scraping down sides of bowl as necessary.
- With mixer on low speed, gradually add the flour mixture until incorporated then stir in m&m’s.
- Pour dough into pie dish and press down so it’s evenly dispersed. Dough will be sticky and it might be hard to press down – simply butter your fingers with non-stick spray or butter to help.
- Bake for 20 minutes or until edges are lightly golden. I under baked on purpose to achieve a chewy and gooey cookie. Feel free to bake a few minutes longer for a more well-done cookie.







My fave chocolate chip cookie recipe is yours and I want to turn it into a cookie cake…any suggestions on how to adapt it? I will try this one for sure though!
Hey Calindy! I would suggest just baking it in a pie pan for 12 minutes then check it for doneness…my take a few minutes longer than that but you want the center to be gooey. 🙂
