S’mores Bars are absolutely delicious. A homemade buttery graham cracker crust is topped with semi-sweet chocolate chips and mini marshmallows and baked until golden and gooey! These S’mores Bars are easy to make and have the most wonderful homemade feel to them. They’re chewy and gooey and irresistibly delicious!

Well, my friends, s’mores bars are THE BEST THING EVER. They taste just like a traditional s’more but gooier, chewier, and way more satisfying. I think my mom said it best when she said “those s’mores bars? are like reeeaaalllyy good.”
They have a buttery chewy graham cracker crust, a layer of dark chocolate chips, and they’re topped with puffy, golden brown, mini marshmallows. These are easy to make, too – make some dough, bake, then add chocolate and marshmallows, bake some more, then turn on your broiler and watch those fluffy bundles of goodness brown up.
The Ingredients:
- Graham Cracker Crumbs: You can purchase graham cracker crumbs or crush your own! These are essential to make the crust and give the entire bar that graham cracker taste.
- Flour: Flour helps bulk up the crust.
- Cornstarch: Cornstarch helps the crust rise while keeping it chewy.
- Baking Powder: Baking powder helps the graham cracker crust rise.
- Salt: A little salt enhances all the other flavors while also giving a slight salty touch.

How to store the S’mores Bars:
Simply store them in an airtight container for 2 days. After 2 day, I would place in them in the refrigerator for up to 5 days. You can warm them up in the microwave or let them come to room temperature. However, these are best enjoy within in 2 days of making them.
Can I freeze them?
Sadly, no. These just don’t freeze well due to the marshmallows. This type of dessert bar should be enjoyed within a few days after making them!

Easy Graham Cracker Crust S'mores Bars

S'mores Bars are absolutely delicious. A homemade buttery graham cracker crust is topped with semi-sweet chocolate chips and mini marshmallows and baked until golden and gooey! These S'mores Bars are easy to make and have the most wonderful homemade feel to them. They're chewy and gooey and irresistibly delicious!
Ingredients
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
- 1/2 teaspoon baking powder
- 6 graham crackers (about 1 cup), crushed
- 1/2 cup (1 stick) unsalted butter, room temperature
- 3/4 cup brown sugar, packed
- 1 egg
- 2 teaspoons vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 2 cups mini marshmallows
Instructions
- Preheat oven to 350 degrees. Line an 8x8 baking pan with parchment paper or aluminum foil. If your using aluminum foil, spray with non-stick baking spray.
- In a large bowl, mix all the dry ingredients; flour, graham cracker crumbs, salt, cornstarch, and baking powder; set aside.
- In a stand along mixer fitted with a paddle attachment, cream together the butter and sugar. Add egg and vanilla, scraping down sides of bowl as necessary.
- Next, add the bowl of dry ingredients to the wet ingredients and continue to mix.
- If dough is a little too crumbly, add a splash of milk.
- Press dough into prepared pan and bake for 25 minutes.
- Take pan out and sprinkle chocolate chips on top, then cover with marshmallow. Bake for an additional 5 minutes then turn on broiler to 525 degrees and broil for 2-3 minutes or until marshmallows turn golden brown. Watch the entire time so they don't burn!
- Let bars completely cool before cutting into them. Pop them in the fridge to speed up the cooling process.
- Enjoy for up 2 days in an airtight container at room temp or up to 5 days in the refrigerator.

I noticed the recipe lists 1 cup flour at the beginning….and 1 cup flour near the end. Is that a typo? What do you do with the second cup of flour?
