These 3 Ingredient Peanut Butter Cookies are insane. I love the simplicity of this recipe. In no time at all, you can have a plate full of cookies baked and ready to eat. These remind me of an energy ball and I would definitely treat these as a healthier treat option given the ingredients! There’s definitely a good amount of protein in these cookies!
They’re incredibly flavorful! The cookies actually do taste wonderful, but the best part is they are super chewy and they really do melt-in-your-mouth making them ultra satisfying.
You can make these very quickly! If you’re in a pinch or wanting a quick sweet fix, these peanut butter cookies are such a great recipe to have in your back pocket.
They’re a great gluten free option! I have a few family members that a require a gluten free diet so these peanut butter cookies are perfect for them!

The Ingredients:

- Peanut Butter – I enjoy the creamy peanut butter in this recipe. I love the richness of it.
- Light Brown Sugar – I love the molasses flavor of brown sugar and I think it compliments the peanut butter really well. 1/2 cup is the perfect amount of sweetness!
- Large egg – The egg helps bind all the ingredients together.
How to make this recipe:
- Mix the peanut butter, egg, and brown sugar in a bowl with a rubber spatula.
- Measure dough using 1 1/2 tablespoon cookie dough scoop then roll into a bowl of brown sugar.
- Place cookie dough on cookie sheet and lightly press down with a fork to flatten cookie. You could also use the bottom of glass to do this.
- Bake at 350 degrees for 11 minutes. Let cool completely.
Substitutions & Additions:
- You can use any type of peanut butter you would like. Crunchy or natural peanut butter would work, just make sure the natural peanut butter is mixed well.
- You can use cane sugar instead of brown sugar. Not much will change other than a slight tweak in flavor. I find that brown sugar offers a little more flavor and moisture to the cookie.
- Add semi-sweet chocolate chips to make these a peanut butter chocolate chip cookie.
- You could add a teaspoon of pure vanilla extract if you would like!
- Sprinkle with a little salt before baking for a salty sweet flavor!
- Use these for ice cream sandwich cookies – simply add a scoop of ice cream between two cookies and freeze. What a wonderful treat that would be!
Storage tips:
Store cookies in an airtight container for up to 3 days. You can also freeze them for up to 3 months.

3 Ingredient Peanut Butter Cookies are a simple treat that requires just peanut butter, sugar and an egg. The result is a soft, chewy melt-in-your mouth cookie with a slightly crisp exterior.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup brown sugar (make sure to pack it) plus 1/4 cup for rolling dough in
- 1 large egg
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper or a non-stick baking mat.
- Next, add peanut butter, 1/2 cup brown sugar and 1 egg to a bowl and mix well with a spatula. Add the other 1/4 cup brown sugar to a small bowl.
- Measure 1 1/2 tablespoons of dough, roll into a ball and then roll in the brown sugar. Place on baking sheet and slightly press down with a fork or bottom of a glass.
- Bake for 11 minutes. Let cool completely before enjoying.
