Add the chilled cubed butter and mix with your hands or a pastry cutter until course crumbs form. Add the buttermilk and gently stir with a spatula until a soft dough forms. It might bubble a little. Ingredients

Blackberry Filling

  • 30 ounces fresh blackberries (5, 6 ounce cartons)
  • 3/4 cup granulated sugar
  • Juice of 1/2 lemon
  • 2 teaspoons vanilla
  • 3 tablespoons cornstarch
  • 1/4 cup cold water

Crust

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons brown sugar
  • 8 tablespoons cold unsalted butter, cut into small pieces
  • 1 1/3 cups buttermilk
  • 4 tablespoon brown sugar, for topping

Other Ingredients

  • Whipped cream or vanilla ice cream

Instructions

    1. Preheat oven to 425 degrees and grease a 9×13 inch baking pan; set aside.
    2. In a small bowl, mix the cornstarch in water until it dissolves.
    3. In a large sauce pan, add all of the filling ingredients including the cornstarch/water mixture. Place over medium heat and bring to a slight bowl/simmer. Simmer until thickened and syrupy, about 5 minutes. It’s done when the sauce coats the back of a spoon.
    4. While the filling is thickening, make the crust by combining all dry ingredients in a large bowl - flour, 6 tablespoons brown sugar, baking powder, baking soda and salt.
    5. Cut in the chilled butter with a pastry cutter or your fingers, to make the texture look like coarse crumbs. Add buttermilk and stir to form a soft dough - the dough might bubble a little which is normal! Also do not over-mix. Once the dough forms it’s good to go.
    6. Pour the blackberry filling into the greased 9×13 pan and top with crust mixture. Sprinkle 4 tablespoons of brown sugar on top. Bake for 20 minutes until crust is golden brown. Let cool and serve with vanilla ice cream or whipped cream.
