We are definitely meat eaters in my family so brisket has become a family favorite meal for all of us. I’ve been baking my brisket and even ribs in the oven for years. I find the process to be so easy and effective!
Why You Will Love This Easy Oven Baked Brisket Recipe
- No special equipment required – All you need is your oven and a baking pan. No smoker or grill is required.
- Simple and minimal ingredients – Just a beef brisket, spices and your favorite barbecue sauce is needed.
- Hands-off cooking – After a quick preparation, let your oven do all the work!
- Perfect for any occasion – Brisket can be enjoyed all year around. It is a wonderful meal for special occasions or a weeknight family meal.
- Leftovers are delicious – turn your brisket into a beef brisket sandwich, tacos, wrap, or even a quesadilla.
Beef Brisket Ingredients:
- 3-5 pounds beef brisket – I used a 3 pound brisket.
- Barbecue seasoning – you can make your own or buy a BBQ seasoning at the store. I like to use Butt Rub.
- Barbecue sauce – any barbecue sauce will work. I like sweeter barbecue sauces but that’s my personal preference!

How to make a fall apart brisket in the oven:
- Preheat the oven to 300 degrees.
- Trim most of the thick layer of fat off if there is one. Then, season both sides of the brisket generously with barbecue seasoning.
- Wrap the brisket tightly with aluminum foil and place on a rimmed baking sheet or in a 9×13 baking dish.
- Bake for at least 3 hours. If your brisket is over 3 pounds, it can take longer. Check for doneness by twisting a fork into the center. The fork should easily twist. The meat will be tender.
- Take the brisket out of the oven. Remove the foil. Brush generously with barbecue sauce. Then place it under the broiler for 5-10 minutes or until the barbecue sauce has caramelized.
- Remove the brisket from the oven and let risk for 30 minutes before slicing. Enjoy!

Frequently Asked Questions
- Is brisket pork or beef? Brisket is beef. It’s a large, tough cut of meat from the cow’s breast. It’s best slow cooked at a low temperature.
- How long do I cook a brisket for in the oven? Generally, brisket should cook for 1 and 15 minutes per pound. However, a 1 pound brisket will most likely take longer than 1 hour.
- What should the internal temperature of beef brisket be? 190 F – 200 F.
- Can I make a brisket in the slow cooker? Yes! Simply prepare the same. But instead, place the brisket in your slow cooker without the aluminum foil. Slow cook it on high for 4-6 hours or on low for 6-8 hours.
- Do I need to trim the fat off? Yes, but you can leave a thin layer. Leaving too much fat will prevent the spices from adhering to the meat. This results in loss of flavor and uneven cooking. Leaving a thin layer, called a “fat cap,” will help retain moisture during the cooking process.
- Do I cook the brisket with the fat side up or down? Place the brisket fat side up as the fat will render down into the brisket while it cooks.
- How much brisket should I serve per person? To be safe, I suggest 1 pound of uncooked brisket per person. This will yield about 1/2 pound of cooked brisket per person. However, take into consideration what your are serving with the brisket to estimate how much you will need. If you have several, hearty side dishes then I would suggest 1/2 pound of uncooked brisket per person.
What to serve with beef brisket:
Brisket goes well with lots of side dishes. Some of my favorites are Corn Casserole, Green Beans, Mashed Potatoes, Potato Salad, or a Dinner Salad. Of course, Baked Beans, and a tangy coleslaw would be a definite winner with brisket. Also, add some pickled red onions for a crisp tangy bite!

The secret to a tender beef brisket:
Low and slow is the key. I have found that cooking the brisket at 300 F results in a tender and juicy brisket. Brisket is a tougher cut of meat. Cooking it at a low temperature for several hours allows the meat’s connective tissues to break down. This results in that fall-apart tenderness. A flavorful dry rub, covering it tightly, and slow roasting locks in moisture, making each bite incredibly juicy and delicious.
Final Thoughts:
Whether you’re making it for a special occasion, a neighborhood get together, or meal prepping for the week, this Easy Oven Baked Beef Brisket Recipe will surely impress! This dish is guaranteed to delight guests. It’s a crowd-pleaser in any situation. You can achieve that rich, smoky flavor with just a few simple ingredients. The magic of slow cooking creates a fall-apart texture right in your kitchen. Serve it with your favorite sides, enjoy the leftovers in creative ways and most importantly, savor every delicious bite!
Baked Brisket

This Easy Tender Beef Bisket is slow-cooked in the oven to perfection, resulting in a juicy, flavorful and tender dish with rich barbecue flavors. It's perfect for special occassions and family gatherings!
Ingredients
- 3-5 pound brisket, fat trimmed. (mine was about 3 lbs)
- 3-4 tablespoons of your favorite barbecue seasoning (I use Butt Rub)
- Sweet Baby Ray’s Original Barbecue Sauce or your favorite barbecue sauce.
Instructions
- Preheat oven to 300 degrees.
- Generously season brisket with barbecue seasoning on both sides, massaging it in with your fingers. You can use as much or as little as you want but don’t be afraid to cover the brisket with it.
- Wrap brisket tightly with at least two pieces of heavy aluminum foil and place on a large rimmed sheet pan or in a large baking dish.
- Bake for 3-5 hours depending on the size of your brisket (mine baked for 3 hours). I have found that 1 pound = 1 hour of cooking time when the brisket is over 2 pounds. Therefore a 3 pound brisket will take at least 3 hours to cook. However, if your brisket is only a 1-2 pounds, it will take at least 2 hours if not more. You can always check it and see if it is tender by twisting a fork in the center – if it twists easily and isn’t tough, it should be done! Internal temperature should be between 190F-200F.
- Remove the brisket from the oven and remove the foil. Generously brush barbecue sauce on top of the brisket. Place the brisket back into the oven and broil on high for 5-10 minutes until slightly charred and bubbly. You can also grill the brisket at the end instead of broiling to caramelize the barbecue sauce. Let the brisket rest for 30 minutes before slicing. Slice against the grain to achieve a tender cut.
Notes
Brisket will last in an airtight container for 3 days in the refrigerator.
Brisket can be seasoned ahead of time (even overnight) and placed in an airtight conatiner in the refrigerator until you're ready to cook.

I am looking at cooking a 12 pound brisket, would you cook this the same way for 12 hours? I wouldn’t want it to be too dry
Wow! It will take quite awhile to cook. I’ve never cooked one that big before. All I can say is check it at about 5/6 hours and continue from there.
Hi! I’m making now and wondering if I should use a roasting pan with a lid. Maybe that would help insure juiciness??? ThAnks!
That would be fine!
Thanks so much!
Unbelievable!!!! So stinking easy and delicious 👏👏👏
This recipe is fabulous!
I made my own rub and cooked as per your instructions.
I will make this again and again!
Delicious!
Thank you Jessica for sharing!
awesome! SO glad!!
Jessica when you char it on broil or the grill do you open the foil or leave it wrapped tight
open the foil!
Hi Jessica! I’m excited to try this. I recently bought a brisket just hovering on 1 lb (only two people to feed) and was wondering what the cooking time for that would be? Just one hour? I’m scared it’ll be undercooked or not as juicy as the longer cooked ones 🙁
2-3 hours probably!
Hi Jessica, Do you think the Brisket could be put in a slow cooker? I live in Palm Desert where the temp. can be as high as 120 degrees! Don’t ever use the oven in the summer.
yes it can! Cook on low for 6-8 hours or high for 4-5!
Hi, just a quick question about a discrepancy in your post. You wrote bake at 300, but then later in the recipe it says 350. Can you please clarify, thank you!
Sorry about that! I’ll update. It’s supposed to be cooked at 300.
Thanks! Looking forward to making it this weekend!
If you have a small oven what temperature 300 or 350.
I would do 300!
Im going to attempt this on the morrow..i always love easier ways to make brisket that tastes delicious without smoking it for 8 hours…thanks for the r.e.c.i.p.i.e. 🤗
You’re welcome! It will be great!
Can you make ahead? I am thinking of making a few for a graduation party. What is your suggestion for convenience?
yes you can! Simply make the entire brisket, bring to room temperature then cover and put in refrigerator. I would then slice it cold (be a little easier), and warm in the oven at 300 for 30 minutes. Add more barbecue sauce if you would like.
Thank you! Off to try now. Wish me luck
I have had the brisket. It is wonderful. I was only disappointed because my husband loved it so much he ate ALOT of it!!😊
Thank you!! lol!
