Kodiak Protein Muffins

Kodiak Protein Muffins are a delicious and nutritious blend of ripe bananas, chocolate chips, and kodiak power cakes mix, perfect for a balanced snack or breakfast. Other nutritious ingredients like coconut sugar and coconut oil are used to ensure this high protein muffin stays extra healthy while also tasting delicious.
Ingredients
- 2 cups kodiak mix
- 3/4 cup almond milk (or milk of choice)
- 1/4-1/2 cup coconut sugar (I use 1/4 cup)
- 1/2 cup semi-sweet chocolate chips (mini or regular size)
- 1/4 cup refined coconut oil, melted
- 2 ripe bananas, mashed
- 1 large egg
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350 degrees and spray a muffin pan with non-stick coconut oil spray (or whatever greaser you would like to use); set aside.
- Add bananas to a large bowl and mash well with a fork. Whisk in egg, melted and slightly cooled refined coconut oil, coconut sugar, almond milk and vanilla extract.
- Next, add the kodiak protein mix and stir well.
- Spoon batter evenly into preparedmuffin pan (about 3/4 full) and bake for 15 minutes. Let cool slightly, remove from pan and enjoy!
Notes
For mini muffins bake for about 12 minutes.
Muffins can be stored in an airtight container for 2 days or for 5 days in the refrigerator. Muffins can also be frozen for up to 3 months. To thaw, simply set out on counter and bring to room temperature.
These are delicious warm or room temperature.
