Here’s the list of ingredients with a few notes about each. I also offer substitution ideas!

- Shredded chicken – any kind of shredded chicken will work – canned, rotisserie or chicken you’ve cooked and shredded yourself. I personally like to make my own shredded chicken. I poach the chicken breasts because I like the texture.
- Cream cheese – I suggest using high fat. You can subtitute for cottage cheese. It’s up to you whether you want to leave it chunky or blend it.
- Buffalo sauce – Any kind will do! Frank’s RedHot seems to be the most popular.
- Ranch dressing – Any kind will work! You can substitute ranch for blue cheese dressing – leave out the blue cheese crumbles if you do.
- Shredded cheese – I like to use cheddar or colby jack. Mozzarella or Monterey Jack would also be good!
- Blue cheese – Blue cheese crumbles are optional. I happen to love them so I like to add them.
- Green onions – Green onions are a must for color and flavor. They balance all the spice and cheese.

Slow Cooker Buffalo Chicken Dip

This Sow Cooker Buffalo Chicken is the easiest way to serve a crowd. Shredded chicken, buffalo sauce, ranch, cream cheese, cheddar cheese and blue cheese are slow cooked until hot and bubbly. The dip stays warm and is ready to serve for game day or holidays!
Ingredients
- 1 pound cooked shredded chicken (Could use a rotisserie chicken or canned chicken)
- 8 ounces cream cheese, room temperature
- 3/4 cup ranch dressing
- 3/4 cup buffalo wing sauce (Like Frank's RedHot)
- 1 cup shredded cheddar cheese or colby jack cheese
- 1/2 cup crumbled blue cheese (optional)
- 2 green onions or chives, sliced for garnish
- Crackers, bagel chips, sliced baguettes or vegetables for serving.
Instructions
- Poach the chicken: If you're cooking the chicken yourself, I like to poach it. Place chicken breasts in a pot with a lid. Add water to cover the chicken by about 2 inches. Season the water with 1 teaspoon salt. Bring the water to a boil then flip the chicken over using kitchen tongs. Place a lid on the pot and turn off the heat. Let chicken sit in the hot water for 10 minutes or until cooked through and reaches an internal temperature of 165 degrees. Remove chicken from the pot to cool. Either dice or shred once cooled.
- In your slow cooker, add shredded chicken, cream cheese, ranch dressing, buffalo sauce, and 1 cup of cheddar cheese. Stir well to combine.
- Cook on low for 1 1/2 -2 hours or on high for 1-2 hours. Stir a few times while cooking to prevent burning.
- Garnish with green onion or chives and crumbled blue cheese if desired.
Serve with tortilla chips, crackers, or vegetables.
