Good, good! Because I have a good one for you. I am calling this recipe Healthy Crunchy Chicken Salad because, well, that’s exactly what it is!

It has a ton of delicious ingredients like green bell pepper, pecans, cranberries, sunflower seeds, and apple, and it’s all tossed with a light Greek yogurt/mayonnaise dressing with a dash of fresh lemon.

Sounds pretty good, huh?

That’s because it is! I got this idea from my friend who’s in my salad swap group. She made a delicious chicken salad recipe, and I simply adapted it to my liking.

I added a few things here and there and decided to use half Greek yogurt instead of all mayonnaise dressing because it’s January and we’re all trying to eat a little healthier, right?

This stuff is SO good. It’s colorful, crunchy and has tons of flavor. I have made this twice for lunch throughout the week, and we love it. I eat it over spinach or on toast.

It’s filling but not heavy, which is exactly the kind of lunch I crave this time of year. My Barbecue Ranch Chicken Salad has that same satisfying-but-fresh vibe too.

I absolutely adore cranberries in salads. If you have followed my blog for some time now, you probably have caught on to that. I love the color, texture and tangy sweet flavor they add to recipes. Plus, they’re good for you!

Chicken Salad

Serves: 6-8
Ingredients
  • 3 chicken breasts, seasoned with salt and pepper
  • 1 green bell pepper, diced
  • 1 apple, diced
  • 1/3 cup chopped green onion
  • 3/4 cup chopped pecans
  • 3/4 cup dried cranberries
  • 1/2 cup pepitas or sunflower seeds
  • 3/4 cup chopped celery
  • Dressing
  • 1/2 teaspoon paprika
  • 1/2 cup mayonnaise
  • 1/2 cup greek yogurt
  • juice from half a lemon
  • salt and pepper to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Season chicken with salt and pepper and bake for 35 minutes or until no longer pink. Let cool then finely chop.
  3. Add chicken to a large bowl and add the rest of the ingredients. Add dressing and gently toss.
  4. To make dressing, add ingredients to a bowl and stir. Add a good pinch of salt and pepper, taste and adjust to your liking.
