Ingredients

Dry Muffin Ingredients

  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet Muffin Ingredients

  • 2 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup vegetable (melted coconut oil would work, too)
  • 1/2 cup milk, room temperature (use at least 2% milk fat)
  • 1/2 cup full fat sour cream or Greek yogurt, room temperature

Other

  • Nutella (or any hazelnut spread)

Instructions

    1. Prepare muffin pan and preheat the oven: Preheat oven to 425 degrees and line a muffin pan with 12 muffin liners; set aside.
    2. Prepare muffin dry ingredients: In a medium bowl whisk together 2 cups flour, 2 1/2 teaspoons baking powder and 1/2 teaspoon salt; set aside.
    3. Prepare muffin wet ingredients: In a large bowl whisk together 1/2 cup granulated sugar, 1/4 cup brown sugar and 1/2 cup oil for about a minute. Add 2 eggs and whisk well. Lastly, whisk in vanilla extract, 1/2 cup milk and 1/2 cup sour cream.
    4. Mix dry and wet ingredients together: Using a spatula, dump the dry ingredients into the wet ingredients and stir until combined. Do not over-mix.
    5. Prepare the muffins to bake: Spoon (or use a large cookie dough scoop) batter into each muffin liner so they are half full. Make a divot in the center of each muffin and dollop a large spoonful of Nutella in the center of each muffin. Top each muffin evenly with the rest of the muffin batter. Liners should be almost full. Finally add another dollop of Nutella on top. Use a toothpick or knife to swirl the Nutella into the batter.
    6. Bake the Muffins: Bake at 425 degrees for 5 minutes then reduce the heat immediately to 350 degrees and bake for an additional 12 minutes or until a toothpick inserted into the center comes out clean. Let cool.

    I just baked a batch of these muffins. There was enough batter for eight muffins. I forgot to swirl the dollops of chocolate hazelnut spread on the muffin tops, otherwise they came out perfectly.
