Easy Oatmeal Raisin Breakfast Bars

Soft and chewy oatmeal raisin breakfast bars made with oats, bananas, coconut and honey. A simple, make-ahead breakfast or snack that’s easy, cozy, and family-friendly.
Ingredients
- 1 1/2 cups old fashioned oats
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 2 ripe bananas, mashed
- 1/2 cup honey
- 1 teaspoon pure vanilla extract
- 1 cup raisins
- 1/2 cup unsweetened shredded coconut
Instructions
- Preheat your oven to 350°F. Lightly spray an 8x8 or 9x9-inch pan with nonstick spray, then line it with parchment paper, leaving a bit of overhang so you can easily lift the bars out later.
- In a large bowl, mash 2 ripe bananas until smooth. Add 2 eggs, 1/2 cup honey, and 1 teaspoon vanilla extract, then stir until everything is well combined.
- Add 1 1/2 cups oats, 1 1/2 cups whole wheat flour, 1 teaspoon baking soda, 1/4 teaspoon salt, and 1 teaspoon cinnamon. Stir until just combined.
- Fold in 1 cup raisins and 1/2 cup shredded coconut.
- Pour the mixture into your prepared pan and spread it evenly.
- Bake for 20 minutes, or until the center is set. Let cool slightly, then lift out using the parchment and slice into bars. Enjoy warm or at room temperature.

I just made them and they were very good, not too mushy either. Baked them until they seemed the correct texture. I also used only 1/4 cup honey and replaced the other 1/4 with unsweetened applesauce. Still sweet enough! Thank you. May add nuts next time.
