I’ve got hot sunny weather, seafood, and pina coladas on my mind and I’ve been back in Illinois for over a week. So what to do when you can’t get out of vacation mode?
Make vacation FOOD! Like this Pina Colada Smoothie or pasta with shrimp.
Or you can pretend like it’s sunbathing weather and sit outside like I did yesterday even though it rained all morning and was cloudy pretty much all afternoon.
Anyone else ready for pool/beach weather? I mean come on! This pregnant lady needs a tan!
Until that day comes, I’m going to soak up my sun by drinking Pina Colada Smoothies. This smoothie recipe is insanely easy and delicious. Just four ingredients are blended together to make a silky, rich, slightly sweet and incredibly satisfying cool drink.
I drank my fare share of pina coladas on our Florida trip and yes, they were amazing, but sometimes a little sweeeeeet. I know…I like sweets, but drinking straight sugar isn’t always my thing so I like this lightened up version that’s naturally sweetened from the ingredients.
The secret ingredient is definitely the vanilla. It totally gives it an added punch of flavor without overpowering the natural flavors of the ingredients. If you look closely you can see the little specs of vanilla beans from the vanilla bean paste I use.
Vanilla makes me happy.

- 1¼ cups coconut milk (full fat or light)
- 1½ cups frozen pineapple
- 1 teaspoon vanilla extract
- 1 frozen banana
- Put all ingredients into a blender and blend until smooth
