Give me all the fruit in the world!
I am soooo into fresh fruit right now. Everything from strawberries to mangoes to pineapple, you name it. Not sure if it’s a pregnancy thing or if it’s just a warmer weather = fresh fruit thing. Perhaps a little of both.
PLUS Vin and I just got back from a mini babymoon in Florida where fresh fruit tastes like heaven and where the key lime pie flows like water. I freaking love Florida. Check out my Instagram for pics!
So we were on the plane back from Florida and I was meal planning for the week. We literally ate our butts off and felt a little like we needed to lighten up this week so all I could think about was fresh fruit, so I told Vin I was going to make some fruit salsa to snack on.
OK salsas are the easiest thing to make. Like ever. AND the ingredients are totally fresh, not cooking just chop and drop.
Not only are you getting tons of flavor from fresh salsas but you’re also getting pure nutrients which is what we need when we feel like we ate too much key lime pie.
But…key lime pie for life, baby.
This recipe for strawberry salsa is crazy easy and can be adapted to what YOU like. I used strawberries, sweet onion, jalapenos, salt, pepper, lime juice, a little lime zest, sugar, and cilantro.
Adapt it by adding other fruits like pineapple or kiwi. You can also add a red onion instead of a sweet one. I have someone that is not a huge onion lover unless they’re grilled or caramelized so I keep it on the mild side. Corn would also be amazing in this recipe. Just some thoughts!
Oh and we enjoyed this with multigrain pita chips to keep it extra healthy and crunchy – I like Stacy’s Pita Chips. Although, regular chips would go well, too!

- 1 pound (16 ounces) Strawberries, finely diced
- ½ jalapeno, finely diced (more if you like heat)
- 2 tablespoons finely minced sweet onion
- 1 tablespoon chopped cilantro
- juice from 1 lime
- zest from half of a lime
- pinch of salt
- pinch of black pepper
- 2 teaspoons granulated sugar
- Add all ingredients to a bowl and gently mix.
- Serve with pita chips.
