Choose the Right Cut
- English-cut short ribs are best for braising and slow cooking.
- Choose short ribs that have even marbling throughout the short rib rather than larger chunks of fat. Marbling is the thing streaks of fat running through the meat. It is white in color. The fat melts during cooking, keeping the meat moist and adding rich, beefy flavor. Too much fat will result in a greasy short ribs and bites of fat instead of meat.
- The short ribs should be meaty and red in color.
Sear for Maximum Flavor
- Pat the short ribs dry with a paper towel before slow cooking or braising. Season them well. Then, sear the short ribs. This caramelizes the meat, adding depth to the final dish.
Skim the Fat

Red Wine Braised Beef Short Ribs (Dutch Oven & Slow Cooker Recipe)

These Red Wine Braised Beef Short Ribs are pure comfort. Beef short ribs are slow cooked in a savory red wine sauce with onions, garlic, potatoes and carrots. And the best part? This recipe is incredibly simple to make!
Ingredients
- 6 short ribs, trim off any excess fat
- 3 garlic cloves (1 tablespoon), minced
- 1 white onion cut into large chunks
- 3-4 large carrots, peeled, and cut into 2 inch chunks
- 15-20 Baby red potatoes (try to get all the same size)
- 1 cup red wine (Cabernet preferred)
- 2 1/2 cups beef broth
- 2 bay leaves
- Salt and pepper
- 1 tablespoon Italian seasoning
- 4 tablespoons flour
- 3-4 tablespoons olive oil
Instructions
- Preheat oven to 300 degrees if braising the short ribs in the oven.
- In a large Dutch oven, add olive oil and place over medium-high heat. Let heat up for about a minute.
- Season short ribs with salt and pepper. Add short ribs and sear on each side for 2 minutes until golden brown. If they start to burn, turn down heat. Remove the beef short ribs to a plate.
- Turn heat to low. In the same large pot add 4 tablespoons of flour to the drippings from the short ribs. Whisk for 1 -2 minutes until flour has cooked out a bit. Next add the red wine, beef broth, Italian seasoning and bay leaves. Taste for seasoning - add a few pinches of salt if necessary. Continue to simmer on low to medium-low heat and whisk until the sauce has thickened and coats the back of a spoon, can take up to 5 minutes. The sause will not resemble gravy, but should have thickened slightly.
- Once the sauce has thickened, add the beef short ribs, onion, garlic, carrots and potatoes into the pot. Place the lid on and cook in the oven for 3 hours at 300 degreess. pour it into the slow cooker with the meat and vegetables. Cook on low for 6- 8 hours or on high for 4-6 hours until the meat is tender.
- SLOW COOKER METHOD - If you're braising the short ribs in the slow cooker, the instructions are very similiar. Once you sear the short ribs, add them to the slow cooker along with the onion, garlic, potatoes and carrots. Then make the red wine sauce and add that into the slow cooker as well. Stir everything together and cook on low for 6-8 hours or on high for 4-6 hours.
Notes
To store, let everything come to room temperature and refrigerate for up to 2 days.
