Meal planning is a non-negotiable for me. I prioritize planning my family’s meals because if I don’t, overwhelm starts to set in. I hope by offering you a few recipe options, you can too, start meal planning for yourself and family. Let’s get to it!
Citrus-Kissed Beef Barbacoa Tacos
This is a recent recipe that I shared and I’m adding it to the meal plan because it’s a great weeknight dinner option. It can be made ahead of time and reheated. It’s wonderful for leftovers as well. It also can be turned into several different dishes including cheesy quesadillas, barbacoa sliders, barbacoa bowls with rice, and more.

Roasted Red Pepper Pasta
I adore this pasta so much. It’s indulgent, beautiful and packed full of flavor. I’d serve this with a dinner salad and crusty bread. It would also be delicious with sautéed shrimp. I’d keep it simple. Season the shrimp with salt and pepper. Cook in olive oil for about 2 minutes on each side.

Bruschetta Salmon with Asparagus
This recipe for salmon is so delicious. I had a similar recipe at a restaurant which inspired me to make it at home. Seared salmon and charred asparagus are covered with balsamic marinated tomatoes then drizzled with balsamic glaze. This recipe requires minimal ingredients and comes together quickly.

Tzatziki Chicken Salad
This recipe is super easy and is wonderful for lunch or dinner. For lunch, I like to eat it with pita chips. For dinner, I like to serve it in a pita or with grilled naan bread. You can add some sliced tomatoes and sliced green pepper for crunch. To keep things super simple, use a rotisserie chicken.

Oatmeal Raisin Breakfast Bars
I love making a grab-and-go breakfast option. Mornings are hectic so these oatmeal raisin breakfast bars are perfect to get me out the door. Simply mix all the ingredients in a bowl and bake. They’re wonderful with coffee!
