Let’s go! Another week of recipes to help plan out meals to feed your hungry stomach. Meal planning is essential in my life. It takes a huge load off of my plate when I know what we are eating for the week. My goal is to help you achieve this as well! These recipes are simple to make, nutrient dense and taste pretty darn good! Let’s get to it!

Healthy Homemade Granola Bites

I am so obsessed with these easy Healthy Homemade Granola Bites. Healthy snacks are often hard to come by and can be expensive. All you need are oats, coconut oil, honey, almonds, chocolate and a touch of salt. They’re crunchy, salty, sweet and kid friendly. We love snacking on these!

Easy Summer Sausage Vegetable Salad

This recipe requires no cooking, just some simple chopping. Diced summer sausage (salami would work, too) is combined with an array of vegetables. The mixture includes cubed cheese and is tossed in a sweet Italian dressing. This is such an easy lunch option!

Tuna & Olive Pasta

This recipe is an oldie but a goodie! It’s simple to make and comes together quickly. Pasta is added to a lemon white wine sauce with onion and garlic. It is then tossed with black olives, canned tuna, fresh parsley, and Parmesan cheese. Yum!

Mexican Zucchini Boats

I absolutely love these! Cooked seasoned ground beef is added to a zucchini boat then topped with cheese and baked until tender. They’re topped with fresh cilantro, sour cream, hot sauce and guacamole if desired.

BLT Sandwiches

I love making these for dinner! They’re absolutely delicious and fun to make. I add hard boiled eggs and fresh avocado to bulk up the sandwich. They’re incredibly satisfying and filling!
