Oven Baked Sausage and Peppers is a family favorite. There are so many ways you can make it, but the easiest way is to roast it in the oven! Serve with bread, and dinner is ready in an hour with minimal preparation and clean up!

Ever since I met my husband, we have been eating Italian sausage and peppers. It’s one of those Italian meals that never gets old and is absolutely delicious.
Plus, when you live in Chicago, it seems as though sausage and peppers are served at every party. It’s good to have a recipe in your back pocket!
I have made this meal several ways, and it turns out no matter what. You can grill the sausage, bake the sausage, brown it in a skillet, then roast it, or you can cook it in a skillet on your stove. Today I’m going to share the easiest way to make it, and that’s in the oven!
I love cooking with Italian sausage because it’s cheap and naturally flavors an entire meal. A few other recipes that I often make are my Creamy Italian Sausage Pasta and my Sausage and Peppers Pasta. Both recipes are also simple to make and result in a hearty, flavorful meal.
Ingredients
Here’s a list of the ingredients you will need to make Oven Baked Italian Sausage with a few important notes about each one.
- Italian sausage – I prefer mild, but if you like spice, go right ahead and get hot Italian sausage.
- Green and red bell peppers – I suggest using only green or a mixture of green and red. Green bell peppers are usually a little cheaper than red.
- Onion – any kind will do! White, yellow or sweet. The sweet onion, will add a little sweetness.
- Extra virgin olive oil – The olive oil helps the sausage brown, but it’s also used to dip bread in. So good. I really like the Atlas brand.
- Oregano and Basil – I like to add a few dried herbs to givethe dish some earthiness.
- Salt and pepper – To season the entire dish. You won’t need too much as the sausage is already seasoned.
- Italian or French bread – For dipping or making sandwiches with. The leftovers are especially good the next day.
- Giardiniera (pickled Italian vegetables) – It’s a must! It adds a little crunch and tang to the sausage.
How to Make Oven Baked Sausage and Peppers
I make this recipe all the time because of its simplicity. It requires one dish and is very easy to make.
Step 1: Slice the onion, peppers and mince the garlic.
Step 2: Prepare the dish by adding the vegetables, oil, and spices to a 9×13 inch dish then top with the Italian Sausage.
Step 3: Bake in a preheated 400 degree oven, turning the sausage once half way through. Serve with bread and giardiniera.

Why You Should Make Oven Baked Sausage and Peppers
- Requires just one dish. This makes dinner prep incredibly easy. One-pan dinners like this and my Sausage, Spinach and Tomato Egg Casserole make busy weeks feel much more manageable.
- It’s cheap. You can feed your family for just a few dollars. Sausage is relatively cheap.
- Can feed a crowd. If you’re having friends or family over for dinner, this is a wonderful recipe to serve. The oven does all the work, so you can enjoy yourself.
- Reheats well. Leftovers are great! I like to serve it over a salad or pasta to switch things up.
I hope you enjoy this recipe as much as my family does. My Tortellini with Italian Sausage and Broccoli is another easy sausage dinner that works really well for busy weeknights.
