Ingredients

For the salmon:

  • 5 salmon fillets (about 5–6 oz each)
  • ¾ cup BBQ sauce
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

For the potatoes:

  • 1½ lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper

For the broccoli:

  • 2 large heads broccoli, cut into florets
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

    1. Preheat the oven to 425°F. Line a large sheet pan with parchment paper for easy cleanup or lightly oil the pan to prevent sticking. Add 1½ lbs halved baby potatoes to the pan and toss with 2 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, ½ teaspoon salt, and ¼ teaspoon pepper. Spread into an even layer and roast for 15 minutes.
    2. While the potatoes roast, stir together ¾ cup BBQ sauce with 1 tablespoon olive oil in a small bowl.
    3. After 15 minutes, remove the pan from the oven. Push the potatoes to one side and add 2 large heads of broccoli florets directly onto the pan. Drizzle the broccoli with 1 tablespoon olive oil and sprinkle with ½ teaspoon garlic powder and ¼ teaspoon salt, then gently toss with your hands right on the pan. Place 5 salmon fillets in the center or wherever they fit best. Brush the salmon evenly with the BBQ sauce mixture.
    4. Return the pan to the oven and bake for 10–12 minutes, until the salmon flakes easily with a fork, the broccoli is tender, and the potatoes are golden and cooked through.
    5. Optional: Broil for 2–3 minutes at the end to caramelize the BBQ sauce on the salmon. Serve immediately, adding extra BBQ sauce if desired.
