Homemade caramel corn is the perfect snack to have around the house during the holiday season. It definitely satisfies that sweet craving and is not too filling. A handful of these caramely crunchy bundles go a long way, but be careful because they are addicting, but really, what sweet snack isn’t? Just be prepared to eat a lot of this…

Caramel Corn Christmas Gift

I made this for our work Christmas party and it was a hit – the bowl was nearly empty after the 2 hour party. Don’t you love that? When you make something and people eat it right up? That is truly my favorite part about cooking and baking – sharing it with colleagues, friends and family. Nothing makes me happier when the bowl is empty or there’s only one cookie left on the plate – the holidays are about sharing and INDULGING.

Homemade Caramel Corn

Ingredients
  • 1 cup butter
  • 1 1/2 cups packed light brown sugar
  • 1/2 cup dark brown sugar (if you don’t have dark brown sugar, you can use light)
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1/2 cup light corn syrup
  • 1 teaspoon baking soda
  • 8 cups popped popcorn
Instructions
  1. Preheat oven to 200 degrees.
  2. In a large pot over medium heat combine butter, brown sugar, corn syrup, vanilla and salt and boil for 5 minutes. Remove from heat; stir in baking soda – stir well. Caramel will bubble up. Pour over the pop corn. Stir to coat well. Bake in large roaster or pan for 1 hour, stirring every 15 minutes. Spread on waxed or parchment paper to dry.
Notes
You can double this recipe. Make sure you use a large pot to make the caramel because it does bubble up quite a bit – mine spilled overt the edge and that is not a fun clean up.
