Healthy Homemade Granola Bites

I am so obsessed with these easy Healthy Homemade Granola Bites. Healthy snacks are often hard to come by and can be expensive. All you need are oats, coconut oil, honey, almonds, chocolate and a touch of salt, and you can make your own healthy granola bites at home!

Anyone else snack on all things crunchy, slightly sweet and covered in chocolate? These types of snacks are my thaaang. I often find snacks like these at Costco or Trader Joe’s.

In fact, I did find a cashew cluster from Costco that I died over – ate the whole bag. Thankfully they inspired me to make my own snack at home. Getting to Costco for my cashew clusters can sometimes be difficult…ya know what I mean.  The good ol’ Costco run usually ends with my kids running around and me spending $593843908…so Homemade Granola Bites here we come!

Easy to make: You can whip up a batch of these granola bites in less than 30 minutes!

Taste amazing: They’re delicious, crunchy and super satisfying! If you or your kids love a good sweet crunch, these granola bites will definitely hit the spot.

Clean Ingredients: Not only does the recipe require minimal ingredients, but they’re clean! It’s super easy to purchase these types of ingredients organic and in bulk. I find all of the ingredients at Costco or my local grocery store. 

Store well: These last forever! You can keep them in an airtight container in the refrigerator for up to a week. You can also freeze them for 2 months! I like double the recipe and freeze them. 

Ingredients

  • Oats: I like to use One Degree Organic Foods Oats. They sell large bags at Costco and they’re gluten free! You can use rolled or quick cooking – the texture will be a little different, but I find that either work really well!
  • Coconut oil: Coconut oil help the oats crisp up when baked. I use refined coconut oil but unrefined coconut oil would work too. Refined does not have the flavor of coconut in it, while unrefined does. 
  • Honey: Honey adds sweetness and helps the granola stick together. 
  • Sliced almonds: Sliced almonds add the perfect crunch and add great protein to the granola bites. 
  • Salt: A little salt balances the sweetness.
  • Semi-sweet chocolate: Semi-sweet chocolate has the perfect amount of sugar to sweeten these up a bit without being overly sweet. 

How to make these easy granola bites

  1. Preheat oven to 325 degrees and line a 8×8 baking pan with parchment paper.
  2. Stir the coconut oil, honey, and salt together in a medium bowl.
  3. Add the oats and almonds and stir well.
  4. Pour granola into the prepared baking pan and push down with a spatula or your hands so it lays evenly. Bake for 15 minutes. Remove and set aside to cool.
  5. Melt chocolate (careful to not burn chocolate if doing it in the microwave. Melt at 30 second intervals stirring well after each). Once chocolate has melted, pour over granola, spreading evenly with a spatula, then place in refrigerator to cool completely (or freezer to cool faster) until the chocolate has hardened. Cut into chunks!

Substitutions

  • Any type of oat will work in this recipe. Feel free to use your favorite brand or type. 
  • You can use avocado oil or mild extra virgin olive oil instead of coconut oil. 
  • Maple syrup can be used instead of honey. 
  • Any nut can be added to this recipe – just make sure they’re chopped up a bit. I’m thinking pecans, walnuts or cashews would be great subs or additions. 
  • Feel free to add chia seeds or flax seed for health benefits. Simply mix a few tablespoons in with the oats and almonds. 

Final thoughts

This recipe is SIMPLE. Just a few ingredients – oats, coconut oil, honey, almonds, salt and chocolate make the most delicious and healthy snack.

This is great recipe to make with kiddos because it doesn’t have to be perfect – let them spread the chocolate or mix the granola!

If you want to double up this recipe, go ahead. It will make a ton but you can totally freeze them!

  • 2 cups oats (old fashioned or quick cooking)
  • 4 tablespoons refined coconut oil, melted (unrefined is fine too but will have coconut flavor)
  • 1/4 cup honey
  • 1/2 cup sliced almonds
  • 1/4 teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions

    1. Preheat oven to 325 degrees and line a 8x8 baking pan with parchment paper.
    2. Stir the coconut oil, honey, and salt together in a medium bowl.
      Add the oats and almonds and stir well.
    3. Pour granola into the prepared baking pan and push down with a spatula or your hands so it lays evenly. Bake for 15 minutes. Remove and set aside to cool.
    4. Melt chocolate (careful to not burn chocolate if doing it in the microwave. Melt at 30 second intervals stirring well after each). Once chocolate has melted, pour over granola, spreading evenly with a spatula, then place in refrigerator to cool completely (or freezer to cool faster) until the chocolate has hardened. Cut into chunks. Store in refrigerator for a crisper granola bite.

Notes

Granola bites will last for a week in an airtight container in the refrigertoar or for 2 months in the freezer.
