Cookies are one of my favorite treats to bake because they’re typically pretty easy and quick. I love baking during the Fall and Winter months – I’m simply more inspired during this time of year! Do you agree? I have so many wonderful cookie recipes on the blog, but I wanted to create a cookie that could be enjoyed for several different reasons – breakfast, as a snack, for the holidays and more. These Soft Cranberry Orange Oatmeal Cookies are unique and undeniably delicious. I didn’t want these cookies to be crisp so I used a secret ingredient (see below!) to ensure these are a soft baked cookie with a wonderful chewy texture. These are wonderful with coffee as well…just saying!

The Ingredients:

- All-purpose flour: AP flour is wonderful for baking.
- Old fashioned oats. Quick oats would work as well: Old fashioned oats hold their shape and offer great texture whereas quick oats will puff up more and offer less texture. Either one will produce a yummy cookie.
- Salt: salt helps enhance the flavors or the cookie.
- Baking Soda: baking soda helps these cookies rise.
- Cornstarch: cornstarch is what helps make these cookies soft.
- Unsalted butter: I like using unsalted butter so I can control the salt in my recipes.
- Granulated Sugar: granulated sugar sweetens up the cookie.
- Brown Sugar: brown sugar helps add moisture, sweetness and a caramel flavor.
- Orange Zest: fresh orange zest really gives these cookies a nice citrus punch.
- Orange Juice: fresh orange juice helps add a little moisture along with a citrus flavor.
- Pure vanilla extract: Vanilla helps add flavor and warmth to the cookie
- Eggs: 2 eggs bind all the ingredients together.
- Dried cranberries: The star of the show! Dried cranberries add flavor, color and nice chewy bite!

Tips and Tricks for Success:
- Always read through the recipe first.
- Measure out all of your ingredients first before starting. This helps reduce mistakes.
- Make sure eggs and butter are room temperature – they will incorporate much quicker and easier.
- Do not over-mix the cookie dough. Use low-speed when adding dry ingredients and dried cranberries. If needed, you could hand-mix them in to prevent over-mixing.
- Using a cookie dough scoop ensures the cookies will be the same size and bake evenly.

Cranberry Orange Oatmeal Cookies

Cranberry Orange Cookies are a soft festive cookie offering a chewy texture with bursts of tart sweet cranberries, and a subtle citrusty zest of orange. Perfect for a breakfast or holiday treat!
Ingredients
- 1 1/4 cups all purpose flour
- 2 1/2 cups old fashioned oats
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons cornstarch
- 3/4 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1 1/4 cups dried cranberries
- Zest of 2 oranges
- 1/4 cup fresh orange juice
Instructions
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a non-stick baking mat.
- In a small bowl, combine orange zest and granulated sugar using your fingers. This helps the orange zest incorporate much easier into the cookie dough.
- In a large bowl, combine all purpose flour, oats, salt, baking soda and cornstarch. Stir and set aside.
- In a stand-alone mixer fitted with a paddle attachment (hand-held mixer works, too), add butter, granulated sugar (with orange zest mixed in) and brown sugar. Mix on medium speed for a few minutes, scraping down sides of bowl as necessary.
- Next, add eggs and vanilla and again mix for a few minutes, scraping down sides of bowl as necessary. Add the fresh orange juice and mix for a few seconds until incorporated.
- With mixer on low-speed, gradually add the bowl of dry ingredients and mix just until incorporated.
- Finally, add the dried cranberries and mix for an additional few seconds just until incorporated. You don't want to over-mix cookie dough batter as it will make the cookies tough.
- Using a cookie dough scoop, measure about 1 1/2 tablespoons of cookie dough and drop on your cookie sheet. Add additional cranberries on top of the cookies if you want! Bake for 10-12 minutes or untli cookies look set but not too brown. Let cool for a few minutes before removing from cookie sheet.
Notes
Store cookies in an airtight container for 3 days room temperature or up to 5 days refrgerated. Cookies can be frozen for 3 months.














Had just enough fresh cranberries to make this. Added extra orange
Juice to counter the tartness of the fresh berries. Left out the corn starch and added a tsp of baking powder.
